Tomato, Bacon & Cheese Quiche

Ingredients

  • 300g Savoury Shortcrust Pastry

  • 20g butter or oil

  • 250g bacon, diced

  • 1/2 onion, finely diced

  • 5 eggs

  • 1 cup cream

  • 1 tsp basil

  • 1 tsp thyme

  • 1 tsp salt

  • 1 tsp pepper

  • 1/2 tsp mustard powder

  • 1 cup cheese, grated

  • 1/2 cup parmesan, grated

  • 2 medium tomato

Method

  1. Preheat the oven to 200˚C fan bake.  Grease a 20cm quiche dish.

  2. Line the dish with the ready-rolled pastry sheets. Trim excess pastry off and crimp the edges. Blind bake for 12 minutes.

  3. Cook the bacon and onion until caramelised in a frying pan. Remove from the pan and set aside.

  4. Mix eggs, milk, cheese, and seasonings in a mixing bowl. Add the onions and bacon, and pour into the pre-baked pie crust.

  5. Place the sliced tomatoes evenly on top.

  6. Bake this for 40-50 minutes or until filling is golden and set.
