Tomato, Bacon & Cheese Quiche
Ingredients
20g butter or oil
250g bacon, diced
1/2 onion, finely diced
5 eggs
1 cup cream
1 tsp basil
1 tsp thyme
1 tsp salt
1 tsp pepper
1/2 tsp mustard powder
1 cup cheese, grated
1/2 cup parmesan, grated
2 medium tomato
Method
Preheat the oven to 200˚C fan bake. Grease a 20cm quiche dish.
Line the dish with the ready-rolled pastry sheets. Trim excess pastry off and crimp the edges. Blind bake for 12 minutes.
Cook the bacon and onion until caramelised in a frying pan. Remove from the pan and set aside.
Mix eggs, milk, cheese, and seasonings in a mixing bowl. Add the onions and bacon, and pour into the pre-baked pie crust.
Place the sliced tomatoes evenly on top.
Bake this for 40-50 minutes or until filling is golden and set.
